Benefits of Carrots

From protecting your vision to boosting your immunity, carrots are a powerful vegetable. They can reduce cholesterol, promote weight loss, improve your skin, keep your gums, teeth and bones healthy. This vegetable certainly packs a punch of goodness! 

Vitamin A: Carrots contain beta-carotene which is a vitamin that the body converts to vitamin A as needed. Before explaining the benefits of vitamin A, it's important to note that consuming Vitamin A supplements when you're already getting the vitamin from food can be more detrimental than good. Too much vitamin A can be toxic to your body. The best way to get the vitamin is through food that contains beta-carotene. Because beta-carotene only converts to as much vitamin A as your body needs versus a supplement that won't know if your body has too much of the vitamin already. I hope that makes sense. 

Benefits of Vitamin A include eye protection. It doesn't improve vision unless the reason for your vision problems is due to lack of vitamin A. But that is very rare. It will however, protect your eye from UV rays and help delay visual impairment. (Source: "The Wellness Encyclopedia of Food and Nutrition"). It also helps keep your skin healthy, boosts immunity, and is a great antioxidant. 

Carrots contain a high amount of potassium. Potassium can help with stress/anxiety, reduce menstrual cramps, help build muscle, keep your bones strong, and maintain normal blood pressure.

Best Way to Consume Carrots:

Drink it: You can easily blend it with some fruits and nuts for a delicious drink. By breaking down the carrots it will actually release more of the nutrients giving you the ultimate health benefits. All while enjoying a tasty drink!

Carrot Juice Recipes:  

  • Place 2 sliced carrots, one handful of blueberries, 3 cups of water and tablespoon of coconut oil or handful of almonds in a blender. Blend for about 2 minutes or until it becomes a liquid. 
  • Place 2 sliced carrots, one sliced apple, 3 cups of water and a handful of almonds or a tablespoon of coconut oil. Blend for about 2 minutes or until it becomes a liquid. 
  • Create your own: Place 2 sliced carrots, a serving of your favorite fruit, 3 cups of water and a healthy fat (nuts or seeds, etc). Blend, Enjoy! 

Steam it: Place carrots in a steamer basket over a pot of boiling water and steam for approximately 8 minutes. If carrots are overcooked, they can loose nutrients, so don't let them get too soft. 

Accompany it with peanut butter or almond butter: The most delicious way to eat raw carrots is having them with peanut or almond butter. It makes a great snack and combining a healthy fat with your vegetables will actually assist your body in absorbing more nutrients. Making it more beneficial for you. See you can enjoy eating and be healthy.

  • It's important to note you should get all natural peanut or almond butter. Ingredients should just be peanut butter or almond butter. Try to avoid peanut or almond butter that contain too many ingredients. Less is more! And I find natural peanut/almond butter tastes better.
